– Chop the sweet potato into cubes and add to the airfryer, coat in oil and the seasoning and cook for 25 minutes on 180.
– Chop the onions and peppers and add to an oiled pan, cook on a medium heat for 10 minutes until soft.
– Coat the steaks in 3/4 of the seasoning mix, and rub in until all coated. Then fry in an oiled hot pan for 4/5 minutes turning regularly. (Yes the pan changes in the video 🤣). Leave the steaks to rest for 5-10 minutes, then chop into chunks.
– Add the rest of the seasoning to the onions and pepper, then leave again for a further 5 minutes.
– Plate up and top with the guac and some cottage cheese, drizzle over the honey
