White Chocolate Pistachio Lava Muffins

White Chocolate Pistachio Lava Muffins

Ingredients


Ingredients:
1 1/2 cups all-purpose flour
1/2 cup sugar
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped pistachios
1/2 cup white chocolate chips
1/2 cup pistachio pudding mix
1/2 cup powdered sugar (for glaze)
2-3 tablespoons milk (for glaze)
For sugar : (adjust to taste)

Instructions

Directions:
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, combine the melted butter, eggs, milk, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in the chopped pistachios and white chocolate chips.
Fill each muffin liner halfway with the batter. Add a spoonful of pistachio pudding mix to the center of each, then top with more batter until the liners are about 3/4 full.
Bake for 18-20 minutes, or until a toothpick inserted into the edge of the muffin comes out clean.
While the muffins cool, make the glaze by mixing the powdered sugar and milk until smooth.
Drizzle the glaze over the cooled muffins and sprinkle with additional chopped pistachios.
