Ingredients
For the Bites:
* 4 cups seedless watermelon, cut into 1 1/2-inch cubes
* 2 balls (8 oz/225 g) burrata cheese, torn into bite-sized pieces
* 1/4 cup fresh basil leaves, torn
* 2 tbsp extra virgin olive oil
* 1/4 tsp flaky sea salt
* 1/4 tsp freshly ground black pepper
### For the Hot Honey Drizzle:
* 1/4 cup hot honey
* 1 tbsp balsamic glaze
* 1 tsp fresh lemon juice
* 1/2 tsp red pepper flakes (optional)
### For the Crunchy Topping:
* 1/3 cup chopped toasted pistachios
* 1 tbsp toasted pumpkin seeds
* 1 tsp lemon zest
### For Garnish (optional):
* Small basil leaves
* Extra balsamic glaze
Instructions
1. Arrange the watermelon cubes on a serving platter.
2. Top each watermelon cube with a piece of burrata.
3. Scatter the torn basil leaves over the bites.
4. Drizzle the olive oil over the burrata.
5. Whisk together the hot honey, balsamic glaze, lemon juice, and red pepper flakes.
6. Spoon the hot honey mixture evenly over each bite.
7. Sprinkle with the toasted pistachios, pumpkin seeds, and lemon zest.
8. Season lightly with flaky sea salt and black pepper.
9. Garnish with small basil leaves.
10. Drizzle with a little extra balsamic glaze if desired.
11. Chill for 5–10 minutes before serving.
12. Serve immediately.
