Ingredients
1/2 lb (225g) turkey bacon, chopped
1/2 lb (225g) chicken ham, diced
1 cup (150g) bell peppers, finely chopped
1/2 cup (50g) red onion, finely chopped
1/2 cup (50g) pepper jack cheese, shredded
1/2 tsp Cajun seasoning
12 egg roll wrappers
Vegetable oil for frying
Dipping sauce of choice (ranch, spicy mayo)
Instructions
In a skillet over medium heat, cook turkey bacon until slightly crispy. Add chicken ham, bell peppers, and onion. Sauté for 4–5 minutes.
Remove from heat and let cool slightly. Stir in shredded cheese and Cajun seasoning.
Lay out an egg roll wrapper, place 2 tbsp of the filling in the center, and roll tightly, sealing the edge with water.
Heat 1–2 inches of oil in a deep skillet to 350°F (175°C). Fry rolls in batches for 3–4 minutes or until golden and crispy.
Drain on paper towels. Serve with your choice of dipping sauce.
