Ingredients
4 small flour tortillas
1/2 lb ground beef
1/2 cup refried beans
1/2 cup enchilada sauce (or taco sauce)
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella
1/2 tsp chili powder
1/2 tsp cumin
Salt & pepper to taste
Toppings:
1/2 cup diced tomatoes
1/4 cup sliced black olives
2 tbsp chopped green onions
1/4 cup sour cream
Instructions
Cook ground beef in a skillet, season with chili powder, cumin, salt, and pepper. Drain excess fat.
Lightly fry tortillas in a pan until crispy and golden. Set aside.
Spread refried beans on one tortilla, then add a layer of seasoned beef.
Place another tortilla on top to create a stack.
Spread enchilada sauce over the top and sprinkle with cheddar and mozzarella.
Bake at 400°F (200°C) for 8–10 minutes until cheese is melted and bubbly.
Remove from oven and top with tomatoes, olives, green onions, and a dollop of sour cream.
Slice and serve warm.
