Instructions
Roast the Sweet Potatoes:
Preheat the oven to 400°F (200°C). Toss the peeled and cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out evenly on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and lightly browned. Stir halfway through for even roasting.
