Ingredients
3 cups mixed salad greens
1 peach, sliced
1 cup fresh blueberries
1/2 cup crumbled feta cheese
1/4 cup chopped pecans
1/4 cup balsamic vinegar
1/2 cup olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
In a large bowl, combine the mixed greens, peach slices, blueberries, feta cheese, and pecans.
In a small bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and gently toss to coat.
Serve immediately, or chill in the refrigerator for up to one hour before serving to allow flavors to blend.
