1/2 cup freeze-dried strawberries (crushed into small pieces)
1/2 cup graham cracker crumbs
1/4 cup sugar
2 tbsp unsalted butter (melted)

Preheat the Oven: Preheat your oven to 325°F (163°C).
Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese with a hand mixer or stand mixer until smooth and creamy. Add the granulated sugar and vanilla extract, and beat until combined.
Add the Egg: Add the egg and beat until just combined.
Add Sour Cream, Heavy Cream, and Flour: Stir in the sour cream, heavy cream, flour, and salt until smooth.
Fill the Crusts: Place mini graham cracker crusts into a muffin tin (either pre-made or homemade) and spoon the cheesecake batter evenly into each crust, filling about 3/4 of the way.
Bake: Bake the cheesecake bites for 18-20 minutes, or until the centers are set and the edges are lightly golden. Allow them to cool in the muffin tin for 10 minutes, then transfer to a wire rack to cool completely.

Make the Crunch Topping: In a small bowl, combine the crushed freeze-dried strawberries, graham cracker crumbs, sugar, and melted butter. Stir until everything is evenly coated.
