Ingredients
6 large eggs
1/4 cup milk (or dairy-free alternative)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried oregano
1 tbsp olive oil
1 small onion, finely chopped
2 cups fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 tsp red pepper flakes (optional, for spice)
Instructions
Preheat & Prepare:
Preheat your oven to 375°F (190°C).
In a bowl, whisk together eggs, milk, salt, black pepper, and oregano until smooth.
Sauté the Vegetables:
Heat olive oil in an oven-safe skillet over medium heat.
Add onions and sauté for 3-4 minutes until soft.
Stir in chopped spinach and cook for 1-2 minutes until wilted.
Cook the Frittata:
Pour the egg mixture over the vegetables in the skillet.
Sprinkle feta cheese evenly on top.
Let cook undisturbed for 2-3 minutes until the edges begin to set.
Bake to Perfection:
Transfer the skillet to the preheated oven.
Bake for 12-15 minutes, or until the frittata is fully set and slightly golden on top.
Serve & Enjoy:
Let cool slightly before slicing.
Sprinkle with extra feta cheese and red pepper flakes if desired.
