Ingredients

• 1 cup all-purpose flour
• 2 large eggs
• 1¼ cups milk
• 2 tbsp melted butter (plus extra for cooking)
• Pinch of salt
Filling Ideas
• Scrambled or fried eggs
• Crispy bacon or breakfast sausage
• Sautéed mushrooms
• Spinach or arugula
• Shredded cheese (cheddar, Swiss, or your favorite)
• Sliced avocado
• Fresh herbs (chives, parsley)
• Hot sauce or salsa

Instructions

Method
Make the Crepe Batter:
1️⃣ In a bowl, whisk together the flour and salt.
2️⃣ Add the eggs and whisk until smooth.
3️⃣ Gradually pour in the milk while whisking to avoid lumps.
4️⃣ Stir in melted butter and let the batter rest for about 10 minutes.
Cook the Crepes:
5️⃣ Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter.
6️⃣ Pour about ⅓ cup of batter into the pan and tilt the pan to spread it thinly.
7️⃣ Cook for 1–2 minutes until the edges start to lift and the bottom is lightly golden.
8️⃣ Flip and cook the other side for another minute. Transfer to a plate and repeat with remaining batter.
Fill and Fold:
9️⃣ Fill each warm crepe with scrambled eggs, your choice of meats, vegetables, and a generous sprinkle of cheese.
🔟 Fold or roll the crepe and serve.
Serving Suggestions
• Serve with a dollop of sour cream, salsa, or avocado on the side.
