Ingredients
2 large sweet potatoes, peeled and cut into ½-inch rounds
½ cup crumbled feta cheese
3 tablespoons honey
2 tablespoons olive oil
Salt & black pepper, to taste
Fresh thyme or parsley (optional, for garnish)
Instructions
1. Preheat oven to 400°F (200°C).
2. Prepare sweet potatoes – Toss the rounds with olive oil, salt, and pepper. Arrange them in a single layer on a parchment-lined baking sheet.
3. Roast for 20–25 minutes, flipping halfway, until tender and slightly caramelized.
4. Top & drizzle – Transfer to a serving plate, sprinkle with crumbled feta, and drizzle with honey.
5. Garnish & serve – Add fresh thyme or parsley for a pop of color and flavor.
