2 large cucumbers (thinly sliced)

1 tbsp honey
1 tsp Dijon mustard

Instructions
Prepare the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Assemble the Salad: In a large bowl, combine the cucumber, beet slices, and red onion.
