pepperoni pizza

Ingredients

2 cups cottage cheese
1 ½ cups shredded mozzarella
½ cup pepperoni slices (or turkey pepperoni)
3 large eggs
1 tsp Italian herbs
½ tsp garlic powder
¼ cup pizza sauce (for topping)
Salt + pepper
Optional but delicious: diced bell peppers, olives

Instructions

1️⃣ Blend cottage cheese until completely smooth.
2️⃣ Mix in eggs, Italian herbs, garlic powder, salt, pepper, and 1 cup mozzarella.
3️⃣ Spread into greased 8×8 baking dish.
4️⃣ Top with pizza sauce, remaining mozzarella, and pepperoni.
5️⃣ Bake at 350°F (175°C) for 28-32 minutes until golden and bubbly.

Weeknight protein win: chop veggies tiny for picky eaters!
Let rest 5 min before slicing for clean pizza squares.
