Oven Fried Feta Rolls with Chili Honey

Ingredients

For the Rolls:
8 oz feta cheese, crumbled
1 cup ricotta cheese
1 tsp fresh thyme leaves (optional)
6 sheets phyllo pastry, cut in half
¼ cup melted butter or olive oil (for brushing)
For the Chili Honey:
¼ cup honey
½ tsp red chili flakes

Instructions

1. Prepare the Filling:
In a bowl, mix together the crumbled feta, ricotta cheese, and thyme (if using) until smooth and well combined. Set aside.
2. Assemble the Rolls:
Preheat your oven to 400°F (200°C).
Lay a half-sheet of phyllo pastry on a clean surface and lightly brush with melted butter or olive oil.
Place about 1 tablespoon of the cheese mixture at one end of the phyllo sheet. Fold in the sides and roll up tightly to form a neat roll.
Repeat with the remaining sheets of phyllo and cheese mixture.
3. Bake the Rolls:
Arrange the rolls on a parchment-lined baking sheet, leaving space between each one.
Bake for 15–20 minutes, or until golden brown and crispy.
4. Make the Chili Honey:
While the rolls bake, heat the honey in a small saucepan over low heat. Stir in the red chili flakes and mix well.
Remove from heat and let it sit for a few minutes to let the flavors blend.
5. Serve:
Drizzle the warm chili honey over the baked feta rolls or serve it on the side for dipping.
Garnish with fresh thyme if desired. Serve the rolls warm and enjoy!
