Ingredients
8 slices white sandwich bread (crusts removed)
8 oz fresh mozzarella, sliced
2 large eggs
¼ cup milk
1 cup breadcrumbs (Italian-style preferred)
½ cup all-purpose flour
Salt & black pepper to taste
Oil (for frying)
Fresh parsley, finely chopped (for garnish)
Instructions
Lay out bread slices and place mozzarella evenly on half of them. Top with remaining bread to form sandwiches.
Press edges gently to seal and cut each sandwich in half (optional).
Prepare three bowls: flour, beaten eggs with milk, and breadcrumbs.
Dip each sandwich first in flour, then egg mixture, then coat well in breadcrumbs.
Heat oil in a skillet over medium heat. Fry sandwiches until golden brown on both sides (about 2–3 minutes per side).
Remove and drain on paper towels.
Garnish with parsley and serve hot while the cheese is perfectly melted.
