Mixed Summer Fruit & Burrata Cubes with Pistachio Crunch

Ingredients

For the Summer Fruit Cubes:
* 1 cup watermelon, cut into 1-inch cubes
* 1 cup cantaloupe, cut into 1-inch cubes
* 1 cup fresh peaches, cut into 1-inch cubes
* 1 cup fresh strawberries, halved
* 1 tbsp fresh lemon juice
### For the Burrata Layer:
* 2 balls (8 oz/225 g) burrata cheese
* 1 tbsp extra virgin olive oil
* 1 tsp lemon zest
* 1/4 tsp flaky sea salt
* 1/4 tsp black pepper
### For the Pistachio Crunch:
* 1/2 cup chopped shelled pistachios
* 1 tbsp honey
* 1 tsp fresh basil, finely chopped
* 1 tsp balsamic glaze
### For Garnish (optional):
* Fresh basil leaves
* Microgreens

Instructions

1. Arrange the watermelon, cantaloupe, peaches, and strawberries on a large serving platter.
2. Drizzle the fruit with the fresh lemon juice and gently toss.
3. Tear the burrata into bite-sized pieces and distribute evenly over the fruit.
4. Drizzle the burrata with olive oil and sprinkle with lemon zest, flaky sea salt, and black pepper.
5. In a small bowl, combine the chopped pistachios, honey, basil, and balsamic glaze.
6. Spoon the pistachio mixture evenly over the fruit and burrata.
7. Garnish with fresh basil leaves and microgreens.
8. Let the salad rest for 5 minutes to allow the flavors to meld.
9. Transfer to serving plates.
10. Serve chilled.
