Ingredients
* 4 boneless, skinless chicken breasts
* 1 cup cream cheese, softened
* 1/2 cup shredded mozzarella
* 1/3 cup blackberry preserves
* 1–2 fresh jalapeños, finely diced (adjust heat to taste)
* 1 tbsp fresh chopped thyme (or 1 tsp dried)
* Salt & black pepper to taste
* 1 tbsp olive oil
* 1 tbsp butter
Optional Glaze:
* 2 tbsp blackberry preserves
* 1 tbsp balsamic vinegar
* 1/2 tsp chili flakes (optional)
Instructions
1. **Preheat oven** to 375°F (190°C).
2. **Prepare the filling**: In a bowl, mix cream cheese, mozzarella, blackberry preserves, diced jalapeño, thyme, salt, and pepper.
3. **Butterfly the chicken breasts**: Slice a deep pocket into each chicken breast without cutting all the way through.
4. **Stuff** each chicken breast with a generous amount of the blackberry-jalapeño filling. Use toothpicks to secure if needed.
5. **Sear the chicken**: Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.
6. **Transfer to oven** and bake for 15–20 minutes, or until internal temperature reaches 165°F (74°C).
7. **Make optional glaze**: In a small pan, warm blackberry preserves, balsamic vinegar, and chili flakes until slightly thickened.
8. **Serve**: Drizzle glaze over chicken and garnish with extra blackberries or sliced jalapeños if desired.
