Ingredients
For the peppers
4 large bell peppers (red, yellow, or orange)
1 tbsp olive oil
For the filling
500 g ground beef or ground turkey
1 small onion (finely diced)
2 cloves garlic (minced)
1 cup cooked rice
1 cup cherry tomatoes (halved)
½ cup feta cheese (crumbled)
2 tbsp chopped parsley
1 tsp oregano
1 tsp paprika
Salt & pepper
For the topping
½ cup mozzarella cheese (shredded)
2 tbsp feta cheese (crumbled)
Optional
Black olives (sliced)
Fresh basil
Chili flakes
Lemon wedges
Instructions
Preheat oven to 190°C (170°C fan).
Slice the tops off the bell peppers and remove the seeds.
Place the peppers in a baking dish.
Heat olive oil in a skillet over medium heat.
Add onion and cook for 3–4 minutes until softened.
Add garlic and cook for 30 seconds.
Add the ground beef, oregano, paprika, salt, and pepper.
Cook for 6–8 minutes until browned.
Stir in the cooked rice, cherry tomatoes, parsley, and feta cheese.
Fill each bell pepper generously with the mixture.
Top with mozzarella and extra feta.
Cover loosely with foil and bake for 30 minutes.
Remove the foil and bake for another 10–15 minutes until the peppers are tender and the cheese is golden.
Garnish with olives, basil, chili flakes, or a squeeze of lemon if using.
