Ingredients
1 lb (450g) ground beef
1 small onion, diced
2 garlic cloves, minced
1 red bell pepper, chopped
1 zucchini, diced
1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced
1 tsp dried oregano
Salt and pepper to taste
1/2 tsp ground cumin
1/2 cup crumbled feta cheese
2 tbsp chopped fresh parsley
Instructions
In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add onion and garlic. Sauté for 2–3 minutes until fragrant.
Stir in bell pepper and zucchini. Cook for 5–6 minutes until vegetables soften.
Add cherry tomatoes, olives, oregano, cumin, salt, and pepper. Cook for another 3–4 minutes.
Remove from heat and sprinkle with feta cheese and chopped parsley.
Serve warm as a low-carb main or over rice/quinoa.
Notes: Add a squeeze of lemon juice for extra brightness.
