Ingredients
For the Chicken Skewers:
1 lb (450 g) boneless, skinless chicken breasts, cut into 1-inch cubes
2 tbsp olive oil
1 tsp dried oregano
1 tsp paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 lemon, juiced
For the Hummus Spread:
1 can (15 oz) chickpeas, drained and rinsed
3 tbsp tahini
2 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, minced
¼ tsp salt
2–3 tbsp water, as needed
Optional Garnishes:
Chopped parsley
Lemon wedges
Cherry tomatoes or cucumber slices
Instructions
Marinate Chicken: In a bowl, combine chicken cubes with olive oil, oregano, paprika, garlic powder, salt, black pepper, and lemon juice. Marinate 30 minutes to 1 hour.
Prepare Hummus: In a food processor, blend chickpeas, tahini, olive oil, lemon juice, garlic, and salt until smooth. Add water 1 tbsp at a time to reach desired consistency.
Assemble Skewers: Thread marinated chicken onto skewers.
Cook Chicken: Preheat a grill or grill pan over medium-high heat. Grill skewers 4–5 minutes per side until cooked through (internal temperature 165°F / 74°C).
Serve: Spread hummus on a serving platter. Arrange cooked chicken skewers on top. Garnish with parsley, lemon wedges, and optional vegetables.
