Fresh Mango cucumber salad – Delicious and Easy to make

2 ripe mangoes, peeled and diced
1 cucumber, diced
1 red bell pepper, diced
¼ red onion, finely chopped
½ cup fresh basil leaves, roughly chopped
¼ cup fresh cilantro, roughly chopped (optional)
Juice of 1 lime
1 tbsp olive oil
1 tsp honey or maple syrup (optional)
Salt and pepper to taste

Instructions

In a large mixing bowl, combine diced mangoes, cucumber, bell pepper, and red onion.
Add the chopped basil and cilantro to the bowl.
In a small bowl, whisk together lime juice, olive oil, honey (if using), salt, and pepper.
Pour the dressing over the salad and gently toss to combine.
