Ingredients
For the Mango Chicken:
1½ tablespoons avocado oil or olive oil
1 pound chicken breast, trimmed
¼ teaspoon turmeric
¼ teaspoon garlic powder
¼ teaspoon cayenne
1 large ripe mango, cut into 1-inch chunks
2 tablespoons lime juice
½ red onion, thinly sliced (about 1 cup)
Salt and pepper to taste
For the Wraps:
Bibb or romaine lettuce for wraps
1 cup carrots, thinly sliced
1 large zucchini, thinly sliced and cut into ~3 inch pieces
Optional Toppings:
Cilantro
Extra slices of fresh mango
Extra lime juice

Directions:
For the Mango Chicken:
Heat oil in a large skillet over medium heat.
Add chicken, turmeric, garlic powder, and cayenne. Cook until the chicken is browned on the outside (about 5 minutes).
Add mango chunks, onion, and lime juice. Cook for another 5 minutes or until chicken reaches an internal temperature of 165°F.
Remove from heat, let cool slightly, and slice the chicken.
To Assemble the Wraps:
Place lettuce leaves on a plate.
Top with carrots and zucchini slices.
Add mango chicken mixture.
Optionally, garnish with cilantro, extra mango slices, and a drizzle of lime juice.
