Ingredients
1 lb boneless skinless chicken breast, cut into bite-sized pieces
1/2 cup grated Parmesan cheese
1/3 cup almond flour
3 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil or butter
1 tbsp chopped fresh parsley (optional)
Instructions
In a bowl, combine Parmesan cheese, almond flour, Italian seasoning, salt, and black pepper.
Toss the chicken pieces in the mixture until evenly coated.
Heat olive oil or butter in a large skillet over medium heat.
Add the chicken bites in a single layer and cook for about 3–4 minutes per side until golden brown and cooked through.
Add the minced garlic during the last minute of cooking and toss gently to coat the chicken in the garlic flavor.
Sprinkle with chopped parsley and a little extra Parmesan if desired.
Serve hot as an appetizer, snack, or with a side salad or roasted vegetables.
