Instructions
**1. Prep the Broccoli**
Steam broccoli until tender, then drain very well. Chop finely and pat dry with paper towels (important for crispiness!).
**2. Mix the Batter**
In a large bowl, combine broccoli, cheddar, Parmesan, egg, almond flour, garlic, and seasonings. Mix until fully combined.
**3. Form the Rounds**
Scoop about 1–2 tablespoons of mixture and shape into small flat patties.
**4. Cook Them**
* **Pan-fry:** Heat olive oil over medium heat and cook 3–4 minutes per side until golden and crispy.
* **OR Bake:** Place on a lined baking sheet, brush lightly with oil, and bake at 400°F (200°C) for 18–22 minutes, flipping halfway.
**5. Serve Hot**
