Ingredients
For the roasted potatoes:
2 lbs baby potatoes, diced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
For the chicken:
1 1/2 lbs chicken breast, diced
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
For the toppings:
1 cup shredded cheddar cheese
6 slices bacon, cooked and chopped
1/2 cup ranch dressing
1/4 cup green onions, sliced
Instructions
1. Preheat the oven to 400°F.
2. Toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, Cajun seasoning, salt, and black pepper.
3. Spread the potatoes on a baking sheet and roast for 25–30 minutes until golden brown and crispy on the edges.
4. Season the diced chicken with garlic powder, paprika, Cajun seasoning, salt, and black pepper.
5. Heat olive oil and butter in a skillet over medium-high heat.
6. Add the chicken and cook for 6–8 minutes until golden brown and fully cooked.
7. Add the roasted potatoes to a serving bowl or tray.
8. Top with cooked chicken, shredded cheddar cheese, chopped bacon, ranch dressing, and sliced green onions.
9. Serve warm while the cheese is slightly melted and the potatoes are crispy.
