Ingredients
1 lb pasta of choice
1 1/2 cups whole milk ricotta
1/2 cup parmesan cheese, grated
1/4 cup olive oil
1/4 cup lemon juice
2 tbsp lemon zest
5 cloves garlic, minced
1/2 cup reserved pasta water
1/4 cup fresh basil, chopped
1 tsp red pepper flakes
1 tsp salt
1/2 tsp black pepper
Instructions
Cook the pasta in salted water until al dente, then reserve 1/2 cup pasta water before draining.
In a large bowl, stir together ricotta, parmesan, olive oil, lemon juice, lemon zest, garlic, red pepper flakes, salt, and black pepper.
Add the hot pasta to the ricotta mixture and toss gently.
Pour in reserved pasta water a little at a time until the sauce becomes creamy and silky.
Fold in the fresh basil.
Serve immediately with extra parmesan, lemon zest, and black pepper.
