Ingredients
1 9-inch pie crust, homemade or store-bought
1 cup granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1/2 cup unsalted butter, melted
1 tablespoon all-purpose flour
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup sweetened shredded coconut
Whipped cream or vanilla ice cream, for serving (optional)
Instructions
Preheat your oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and crimp the edges.
In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined.
Stir in the melted butter, flour, white vinegar, and vanilla extract until smooth.
Fold in the chopped pecans and sweetened shredded coconut until evenly distributed throughout the filling mixture.
Pour the filling into the prepared pie crust, spreading it out evenly.
Place the pie in the preheated oven and bake for 45-50 minutes, or until the filling is set and golden brown on top. If the crust edges start to brown too quickly, you can cover them with foil halfway through baking.
Remove the pie from the oven and let it cool completely on a wire rack before slicing.
Serve slices of Kentucky Sawdust Pie with whipped cream or vanilla ice cream, if desired.
