Ingredients
1 lb (450g) chicken breast or thighs, cut into bite-sized cubes
2 tbsp olive oil
3 cloves garlic, minced
1 tsp paprika
1 tsp Italian seasoning
½ tsp black pepper
Salt to taste
1 tbsp lemon juice
1 tbsp fresh parsley, chopped
Creamy Dip (optional):
½ cup mayonnaise or Greek yogurt
1 tbsp Dijon mustard
1 tbsp lemon juice
1 clove garlic, minced
Salt & pepper to taste
Instructions
In a bowl, combine chicken, olive oil, garlic, paprika, Italian seasoning, lemon juice, salt, and pepper. Marinate for at least 20 minutes.
Thread chicken pieces onto skewers.
Preheat grill or grill pan to medium-high heat.
Grill skewers for 8–10 minutes, turning occasionally, until nicely charred and cooked through.
Mix dip ingredients in a small bowl until smooth.
Serve hot with creamy dip and sprinkle with fresh parsley.
