Ingredients
1 sheet puff pastry, thawed
4 large eggs
1/2 cup cooked bacon, chopped
1/2 cup shredded cheddar cheese
1 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
1 egg (for egg wash)
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a skillet, melt butter over medium heat and scramble the eggs with salt and pepper until just set.
Roll out the puff pastry and cut it into 4 equal rectangles.
Place scrambled eggs, chopped bacon, and shredded cheddar cheese on one half of each pastry rectangle.
Fold the pastry over the filling and press the edges together with a fork to seal.
Brush the tops with the beaten egg wash for a golden finish.
Bake for 18–20 minutes until the pastry is puffed and golden brown.
Let cool slightly before serving.
