Homemade Breakfast Hot Pockets – Tasty and Easy to Make

1 sheet puff pastry, thawed
4 large eggs
1/2 cup cooked bacon, chopped
1/2 cup shredded cheddar cheese
1 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
1 egg (for egg wash)

Instructions

1️⃣ Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2️⃣ In a skillet, melt butter over medium heat and scramble the eggs with salt and pepper until just set.
3️⃣ Roll out the puff pastry and cut it into 4 equal rectangles.
4️⃣ Place scrambled eggs, chopped bacon, and shredded cheddar cheese on one half of each pastry rectangle.
5️⃣ Fold the pastry over the filling and press the edges together with a fork to seal.
6️⃣ Brush the tops with the beaten egg wash for a golden finish.
7️⃣ Bake for 18–20 minutes until the pastry is puffed and golden brown.
8️⃣ Let cool slightly before serving.
