Ingredients
Chicken Marinade
1½ lb chicken breast or thighs, cut into chunks
½ cup pineapple juice
¼ cup soy sauce
2 tbsp brown sugar or honey
2 tbsp olive oil
2 cloves garlic, minced
1 tsp grated ginger
½ tsp black pepper
Kabobs
Fresh pineapple chunks
Red bell pepper, cut into chunks
Green bell pepper, cut into chunks
Red onion, cut into chunks
Wooden or metal skewers
Instructions
Mix pineapple juice, soy sauce, brown sugar, olive oil, garlic, ginger, and black pepper.
Add chicken and marinate 30 minutes to 4 hours.
Thread chicken, pineapple, peppers, and onion onto skewers, alternating for even cooking.
Preheat grill to medium-high heat.
Grill kabobs 10–12 minutes, turning and basting, until chicken is cooked through and nicely charred.
Rest 5 minutes, then serve hot
