Ingredients
1 block Halloumi cheese (cut into 1/2-inch thick slices)
Olive oil
1 cup Cherry tomatoes
1 Red onion (thinly sliced)
1 Cucumber (cut into chunks)
1 Green bell pepper (cut into thin strips)
1 Red bell pepper (cut into thin strips)
1/2 cup Kalamata olives (pitted)
Instructions
1. Heat grill to medium-high.
2. Brush halloumi with olive oil, grill for 2-3 minutes per side, until golden and charred.
3. In a large bowl, combine tomatoes, onion, cucumber, peppers, and olives.
4. Toss salad with olive oil, salt, and pepper.
5. Arrange grilled halloumi on top of the salad and drizzle with any remaining grilling juices. Serve immediately.
