Instructions

Make the Tomato Salsa: In a small bowl, combine the diced tomatoes, red onion, minced jalapeño, chopped cilantro, lime juice, and sugar. Stir well and set aside for the flavors to meld together.
Cook the Rice: In a large pot, bring the chicken broth to a boil. Add the rice, soy sauce, sesame oil, and garlic powder. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and fluffy. Remove from heat and keep covered to stay warm.
