Greek Chicken with Lemon and Feta – Well Detailed Recipe

4 boneless, skinless chicken breasts
2 tbsp olive oil
1 lemon, zest and juice
2 tsp dried oregano
2 garlic cloves, minced
1/2 cup crumbled feta cheese
1/4 cup Kalamata olives, pitted and chopped
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Instructions

In a small bowl, mix olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper.
Rub the chicken breasts with the lemon mixture, ensuring they are evenly coated.
Place the chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
During the last 5 minutes of baking, sprinkle the crumbled feta cheese and chopped Kalamata olives over the chicken breasts, allowing them to soften and melt slightly.
Remove from the oven and garnish with fresh parsley. Serve with a side of roasted vegetables or a Greek salad.
