Ingredients
For the Feta Bites
200 g feta cheese, cut into cubes
1 egg, beaten
½ cup (60 g) pistachios, finely crushed
¼ cup (30 g) breadcrumbs
Oil for frying
For the Blackberry Honey
½ cup (80 g) blackberries
2 tbsp (30 ml) honey
1 tbsp (15 ml) lemon juice
For Serving
Extra crushed pistachios
Fresh blackberries
Fresh thyme or mint
Instructions
Pat feta cubes dry to help the coating stick.
Dip each cube into the beaten egg, then coat in the pistachios and breadcrumbs mixture.
Heat oil in a pan over medium heat.
Fry the feta bites until golden and crispy on all sides, about 2–3 minutes.
In a small saucepan, combine blackberries, honey, and lemon juice.
Cook over low heat, gently mashing the berries until the sauce thickens and becomes glossy.
Strain if desired or leave slightly chunky.
Arrange feta bites on a serving plate.
Drizzle with warm blackberry honey.
Garnish with extra pistachios, fresh berries, and herbs.
Serve immediately while warm.
