Ingredients
Main Ingredients:
• 1 lb lean ground beef
• 4 to 6 medium Russet potatoes
• 1 packet (1 oz) taco seasoning
• ½ cup water
• 1 cup shredded cheddar cheese
• ½ cup sour cream
• ¼ cup chopped green onions
• ½ cup diced tomatoes
Instructions
Prepare the Potatoes:
1. Wash and scrub the potatoes, then pierce with a fork.
2. Bake at 400°F (200°C) for 45–50 minutes, or until fork-tender.
Cook the Ground Beef:
3. In a skillet over medium heat, brown the ground beef and drain excess grease.
4. Stir in taco seasoning and ½ cup water. Simmer for 5 minutes, until thickened.
Assemble the Dish:
5. Slice open the baked potatoes and fluff with a fork.
6. Spoon the seasoned beef on top.
7. Top with shredded cheese, sour cream, green onions, and diced tomatoes.
