Ingredients
* 12 mini bell peppers (assorted colors)
* 4 ounces goat cheese, softened
* 1/4 cup sun-dried tomatoes, chopped
* 2 tablespoons fresh herbs (basil, thyme, or parsley)
* 1 clove garlic, minced
* 1 tablespoon olive oil
* Salt and pepper to taste
Instructions
1. Preheat oven to 400°F.
2. Carefully slice the top off each pepper and remove seeds with a small spoon.
3. In a bowl, combine goat cheese, sun-dried tomatoes, fresh herbs, and garlic.
4. Spoon the mixture into each pepper cavity.
5. Drizzle peppers with olive oil and place on a baking sheet.
6. Roast for 18 to 20 minutes until peppers are tender.
7. Season with salt and pepper and serve warm or at room temperature.
