Cucumber Ribbon Tzatziki Chicken Salad – Easy and Delicious

Ingredients

For the Tzatziki Dressing:
• 1 cup Greek yogurt
• 1 small cucumber, grated and drained
• 1 garlic clove, minced
• 1 tbsp fresh dill, chopped
• 1 tbsp lemon juice
• ½ tsp salt
• ¼ tsp black pepper

For the Chicken:
• 2 boneless, skinless chicken breasts
• 1 tbsp olive oil
• 1 tsp dried oregano
• ½ tsp garlic powder
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp black pepper

For the Salad:
• 2 large cucumbers, peeled into long ribbons using a vegetable peeler
• 1 cup cherry tomatoes, halved
• ½ cup red onion, thinly sliced
• ½ cup kalamata olives (optional)
• ½ cup crumbled feta cheese (optional)
• 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Tzatziki Dressing:
In a bowl, mix Greek yogurt, grated cucumber (squeeze out excess water), garlic, dill, lemon juice, salt, and black pepper until combined. Refrigerate until ready to use.
2. Cook the Chicken:
Rub the chicken breasts with olive oil, oregano, garlic powder, paprika, salt, and black pepper.
Heat a skillet over medium-high heat and cook the chicken for 5-6 minutes per side until golden and cooked through. Let rest for 5 minutes before slicing into thin strips.
3. Assemble the Salad:
On a large serving platter, arrange the cucumber ribbons, cherry tomatoes, red onion, and olives (if using). Add the sliced chicken on top.
4. Add the Tzatziki:
Drizzle the tzatziki dressing over the salad or serve it on the side for dipping.
5. Serve:
Garnish with fresh parsley and crumbled feta cheese, if desired. Serve immediately for a fresh, flavorful meal!
