Ingredients
Carrot – 1, grated
Courgette – 1, grated
Spring onions – 3, chopped
Garlic clove – 1 large, minced
Fresh coriander – 1 handful, chopped
Plain flour – 50 g
Spice mix – 2 tsp
Salt & pepper – to taste
Pepper – 1, chopped
Water – 75 ml
Oil – 1 tbsp
Olive oil – 1 tbsp
Instructions
1. Grate the carrot and courgette, then squeeze out excess moisture.
2. Combine with spring onions, garlic, coriander, and chopped pepper in a bowl.
3. Stir in flour, spice mix, salt, and pepper.
4. Gradually add water, mixing until a batter forms.
5. Heat oil in a pan over medium heat.
6. Drop spoonfuls of the mixture into the pan and flatten slightly.
7. Cook for 3-4 minutes on each side until golden and crisp.
8. Drain on paper towels and serve warm.
