Ingredients
• 1 cup large green olives (pitted)
• ½ cup all-purpose flour
• 2 eggs
• 1 cup breadcrumbs (panko works best)
• ¼ cup grated Parmesan cheese
• ½ tsp garlic powder
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp black pepper
• Vegetable oil for frying
• 2 tbsp chopped fresh parsley (for garnish)
Garlic Aioli ![]()
• ½ cup mayonnaise
• 1 clove garlic, finely minced
• 1 tsp lemon juice
• ¼ tsp salt
Instructions
Pat olives dry with paper towels so the coating sticks well.
Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, paprika, salt, and pepper.
Roll olives in flour, dip into egg, then coat thoroughly in the breadcrumb mixture.
Heat about 2 inches of oil in a small pan to 350°F (175°C).
Fry olives in small batches for 1–2 minutes until golden and crispy.
Transfer to paper towels to drain excess oil.
In a small bowl, mix mayonnaise, garlic, lemon juice, and salt to make the aioli.
Serve fried olives warm with garlic aioli and sprinkle with chopped parsley.
