Ingredients
For the flatbread
1 large flatbread or naan
150 g brie cheese (sliced)
1 cup corn kernels (fresh, canned, or frozen)
1 tbsp olive oil
Salt & pepper
For the hot honey
2 tbsp honey
1 tsp chili flakes or hot sauce
Optional
Fresh thyme or basil
Cracked black pepper
A squeeze of lemon or lime
Instructions
Preheat oven to 220°C
Heat olive oil in a pan and cook corn until golden and slightly charred
Season with salt and pepper
Place flatbread on a baking tray
Top with brie slices and caramelized corn
Bake for 8–10 minutes until cheese is melted and edges are crispy
Warm honey with chili flakes
Remove flatbread from oven and drizzle with hot honey
Finish with herbs and black pepper
Slice and serve immediately
