Ingredients
For the Chips:
1 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
1/2 tsp garlic powder (optional)
1/2 cup water
Neutral oil for frying
For the Whipped Cottage Cheese Topping:
1/2 cup cottage cheese (full-fat)
Salt and freshly ground black pepper
Optional: a drizzle of olive oil or lemon zest for brightness
Instructions

Make the Chip Batter:
In a mixing bowl, combine flour, salt, baking powder, and garlic powder.
Gradually add water and whisk until a smooth, pourable batter forms (similar to crepe batter).

Fry the Chips:
Heat oil in a deep skillet to 180°C (350°F).
Pour a spoonful of batter into the oil, using the back of the spoon to spread it thinly and form ruffled edges.
Fry for 1–2 minutes per side or until golden and crispy.
Drain on a paper towel and sprinkle with flaky salt if desired.

Make the Whipped Cottage Cheese:
In a blender or food processor, whip the cottage cheese until creamy and smooth.
Season with salt and a generous amount of black pepper. Chill before serving.

Serve:
Stack the chips on a plate and top with a dollop of whipped cottage cheese.
Finish with extra cracked pepper or a touch of lemon zest for brightness.
