Ingredients

- 300g pasta (penne, rigatoni, or your favorite)
- 300g steak, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 250g pumpkin purée
- 150ml cream
- 50g Parmesan cheese, grated
- 1 tsp fresh thyme (or dried thyme)
- ½ tsp nutmeg (optional)
- Salt and black pepper
- Fresh parsley or basil, for garnish
Instructions
- Cook the pasta
Cook the pasta in salted water according to the package instructions. Reserve a little pasta water, then drain. - Cook the steak
Season the steak pieces with salt and pepper. Heat olive oil in a large pan and sear the steak for 2–3 minutes per side until browned. Remove and set aside. - Make the pumpkin sauce
In the same pan, melt the butter and cook the garlic for 30 seconds. Add pumpkin purée, cream, thyme, nutmeg, salt, and pepper. Stir until smooth. - Combine everything
Add Parmesan cheese and a splash of pasta water if needed. Toss in the cooked pasta and steak until well coated. - Serve
Top with extra Parmesan and fresh herbs. Serve warm and enjoy
