Ingredients

  • 300g pasta (penne, rigatoni, or your favorite)
  • 300g steak, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 250g pumpkin purée
  • 150ml cream
  • 50g Parmesan cheese, grated
  • 1 tsp fresh thyme (or dried thyme)
  • ½ tsp nutmeg (optional)
  • Salt and black pepper
  • Fresh parsley or basil, for garnish

Instructions

  • Cook the pasta
    Cook the pasta in salted water according to the package instructions. Reserve a little pasta water, then drain.
  • Cook the steak
    Season the steak pieces with salt and pepper. Heat olive oil in a large pan and sear the steak for 2–3 minutes per side until browned. Remove and set aside.
  • Make the pumpkin sauce
    In the same pan, melt the butter and cook the garlic for 30 seconds. Add pumpkin purée, cream, thyme, nutmeg, salt, and pepper. Stir until smooth.
  • Combine everything
    Add Parmesan cheese and a splash of pasta water if needed. Toss in the cooked pasta and steak until well coated.
  • Serve
    Top with extra Parmesan and fresh herbs. Serve warm and enjoy
