1 lb ground turkey
1 tbsp olive oil
1 small onion, diced
2 cups bell peppers (red, yellow, green), sliced
2 cloves garlic, minced
1 tsp paprika
1/2 tsp Italian seasoning
Salt and black pepper, to taste
1 cup cottage cheese
1/2 cup shredded cheddar cheese
2 tbsp fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat.
Add ground turkey and cook until browned, breaking it up as it cooks.
Stir in diced onion, garlic, and bell peppers. Cook for 4–5 minutes until softened.
Season with paprika, Italian seasoning, salt, and pepper.
Reduce heat to low and stir in cottage cheese until creamy and combined.
Sprinkle shredded cheddar cheese on top and cover until melted.
Garnish with fresh parsley and serve warm.
