Ingredients
4 cups mixed greens (arugula or spring mix)
2 mandarins, peeled and segmented
1/2 cup pomegranate arils
1 ripe avocado, sliced
1/3 cup feta cheese, crumbled
2 tablespoons red onion, thinly sliced (optional)
2 tablespoons chopped fresh mint or parsley
Citrus Dressing
3 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon mandarin juice
1 teaspoon honey or maple syrup
Salt and freshly ground pepper, to taste
Instructions
Arrange mixed greens on a large serving platter or bowl.
Scatter mandarin segments evenly over the greens.
Add pomegranate arils, avocado slices, and red onion if using.
Sprinkle feta cheese and fresh herbs over the salad.
In a small bowl, whisk together olive oil, lemon juice, mandarin juice, honey, salt, and pepper.
Drizzle dressing lightly over the salad just before serving. Toss gently if desired.
