1. Line a 9×9-inch baking dish with parchment paper, leaving an overhang for easy removal.
2. For the crust: In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared dish. Chill in the refrigerator while preparing the filling.
3. For the cheesecake filling: In a mixing bowl, beat cream cheese until smooth. Add powdered sugar, peppermint extract, and green food coloring (if using), and mix until combined.
4. In a separate bowl, melt the chocolate chips with the heavy cream in the microwave in 30-second intervals, stirring until smooth. Let it cool slightly.
5. Fold the melted chocolate into the cream cheese mixture until fully incorporated.
6. Spread the cheesecake filling over the chilled crust, smoothing the top with a spatula.
7. Chill in the refrigerator for at least 4 hours or until set.
8. Once set, lift the cheesecake out of the dish using the parchment paper overhang and cut into bite-sized squares.
9. Drizzle melted chocolate over the cheesecake bites and sprinkle with crushed candy canes.
10. Serve chilled and enjoy these delicious no-bake treats!
