Directions:
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. For the filling: Beat cream cheese, sugar, and vanilla until smooth. Chill while making dough.
3. For the dough: Cream butter and sugars until fluffy. Beat in egg and vanilla. Mix in flour, baking soda, and salt. Stir in chocolate chips.
4. Scoop 1 tbsp of dough, flatten slightly. Place 1 tsp cheesecake filling in center, then cover with another bit of dough. Seal edges and roll into a ball.
5. Place on baking sheet, spacing 2 inches apart. Bake 10–12 minutes, until golden at edges.
6. Cool 5 minutes on tray before transferring to a rack.
