2 large avocados, halved and pitted
2 cups cooked chicken, shredded or diced
1/3 cup mayonnaise or Greek yogurt
2 tbsp red onion, finely diced
1 tbsp fresh lime juice
1 tbsp chopped fresh cilantro
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Instructions
In a mixing bowl, combine the shredded chicken, mayonnaise (or Greek yogurt), diced red onion, lime juice, and chopped cilantro.
Season with paprika, salt, and black pepper, then mix until everything is well combined.
Spoon the chicken salad mixture evenly into the avocado halves.
Sprinkle a little extra paprika and cilantro on top for garnish.
Serve immediately for a fresh and delicious meal.
