Ingredients
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
6 cups mixed greens
1 avocado, sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup feta cheese, crumbled
Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey
1/2 tsp Dijon mustard
Salt and pepper, to taste
Instructions
Preheat the grill to medium-high heat.
Rub the chicken breasts with olive oil, garlic powder, salt, and pepper. Grill for 6-7 minutes per side until cooked through. Let rest before slicing.
In a small bowl, whisk together dressing ingredients.
Assemble the salad with greens, avocado, tomatoes, red onion, and feta. Top with sliced grilled chicken.
