Ingredients
1 cup corn kernels (fresh or canned)
1/2 cup all-purpose flour
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup milk
1 tablespoon chopped fresh parsley (optional)
1 teaspoon baking powder
1/2 teaspoon garlic powder
Salt and pepper, to taste
Oil for frying
Instructions
In a large bowl, whisk together the flour, baking powder, garlic powder, salt, and pepper.
Add the corn kernels, cheddar cheese, Parmesan cheese, eggs, milk, and parsley (if using). Stir until the mixture is well combined.
Heat the Oil:
Heat about 1/2 inch of oil in a large skillet or frying pan over medium heat. The oil is ready when a small spoonful of batter sizzles upon contact.
Fry the Fritters:
Using a spoon, drop small spoonfuls of the batter into the hot oil. Flatten them slightly with the back of the spoon. Fry for 2-3 minutes per side, or until golden brown and crispy.
Drain and Serve:
Remove the fritters from the skillet and place them on paper towels to drain excess oil.
Serve:
Serve warm, with a dipping sauce of your choice or just as they are!
