6 cups brioche bread, cut into cubes
1½ cups whole milk
1 cup double cream
3 large eggs
½ cup caster sugar
1 tsp vanilla extract
½ tsp cinnamon (optional)
1 cup dark chocolate chips
2 tbsp unsalted butter (for greasing dish)
Instructions
1. Preheat oven to 170°C (fan 160°C). Grease a baking dish with butter.
2. Arrange brioche cubes evenly in the dish and sprinkle over chocolate chips.
3. In a bowl, whisk milk, cream, eggs, sugar, vanilla, and cinnamon until smooth.
4. Pour custard mixture over the brioche. Gently press the bread so it absorbs the liquid. Rest for 10–15 minutes.
5. Bake for 35–40 minutes until golden brown on top and set in the centre.
6. Cool slightly before serving. Best enjoyed warm.
